Aroma: Big, bright raspberries and sour cherry interlaced with gently lifted aromas of violets with savory notes of gingerbread, sage, and fire toasted oak, and subtle notes of smoke and minerality. A finely and seamlessly interwoven combination of bright and earthly notes, carefree and seductive.
Flavors: Bright notes of cherry and raspberry are framed with hints of toasted pastry and smoke, followed by hints of ginger and earthy notes of sage and redwood. A light peppery spice give more dark character and enhances the structured and balanced acidity. The mouth feel is plush and concentrated, finishing with lingering red raspberry and notes of smoky bacon and toasty oak.
Great growing season for Pinot Noir, a wet spring with rains stopping just at flowering set up an extended growing/ripening season with moderate temperatures 78-94° F day time temperature with cool night and foggy mornings, great for slow gentle ripening. Giving fruit expression and maintaining a brilliant minerality and acidity.
A great choice for pairing with goat cheese, oven roasted chicken, Paella and Tuscan marinated roast pork loin.
